Alexis Gauthier used to serve foie gras. Now he's a vegan activist. Here's why.

"They're just the same as us. They want to live. They want to love. They want to hope."

Chef Patron and namesake of Gauthier Soho, Alexis Gauthier is best known as a pioneer in plant-based fine dining: an advocate for the possibilities of not only food without cruelty, but a world that follows suit.

But this hasn't always been the case. Like most of us, Alexis didn't start here – he found his way over time, starting from one pivotal moment that changed his way of thinking forever.

In a first look at a new documentary from The Empathy Project and director Tristan Copley-Smith, Alexis retraces the steps that brought him to this point. Honest, open, tinged with joy and sadness, he recounts a journey that has reshaped his career and his world entirely.

This is what empathy looks like.
